Indonesian Style Jackfruit Curry (Sayur Nangka)

Jackfruit Curry

Jackfruit Curry

Three days ago when I went to Spencer, I couldn’t hold my excitement when I saw the jackfruit. It took me a while to decide whether to buy it or not. I really miss eating the Indonesian jackfruit curry which most of the Indonesian eat with ketupat (rice cooked in woven palm leaf pouch) and beef/chicken curry.

In the meanwhile, I was really not sure if I can really cook the jackfruit curry well. And I also wasn’t sure if I could find all the ingredients which are required to cook this dish. Anyway, I finally decided to try and cook this dish using the ingredients which are available in my home. The result is really not bad… it is quite good and I do love it :)

  • ¬†400 grams jackfruit – cut medium pieces – boil half done
  • 200 grams snake beans – cut about 3 cms length
  • 6 pcs onions – make a paste
  • 4 cloves garlic – make a paste
  • Ginger – about 3 cms – make a paste
  • One and half coconut – make half litre thick coconut milk and one and half litre thin coconut milk
  • Salt to taste – for this recipe I have used one teaspoon
  • Sugar – a sprinkle
  • 1 tsp turmeric powder
  • 1 tbs red chili powder
  • 3 tbs oil

How to make:

  • ¬†Heat oil in the pan
  • Saute the onion paste, garlic paste, ginger paste, turmeric powder and chili powder until golden brown
  • Add thin coconut milk, jackfruit, snack beans, salt and sugar
  • When the jackfruit and snack beans almost done, add the thick coconut milk until the curry is thickened
  • Served hot with warm steam rice … :) yummmmm :p

Saute in hot oil all the pasted ingredients/spices first in all curry dish instead of boiling all the pasted ingredients together in coconut milk. This will enhance the taste of the spices… Have a good try :)
