Snow Cashew Cookies
One thing that I will not forget when the first time I ate this cookies was the softness and the sweetness which melt in the mouth. The taste of the cashew really spoils in the tongue. I tried to make this recipe about few years back and since then, I always make this cookies during some events or festivals.
I like to pack these cookies nicely and give them away as gift to my hubby’s relatives and friends. And they really love these cookies. There was one time that I had to send the second pack to the same relative
because these cookies really in demand.
These cookies are coated with sugar icing or powder. I never use ready made sugar powder in any of my cooking. I used to grind the crystal sugar in food processor to make sugar powder
I don’t like to spend so much of time to search for baking materials, specially in this city all these things are quite difficult to find.
Ingredient:
250 g Butter
100 g Sugar Powder
200 g Cashew nuts, Fry without oil on the pan, grind in the food processor
250 g Flour
Sugar Spread:
100 g Sugar Powder
1/2 tsp Vanilla Powder
How to make:
- Mix the butter with the sugar powder until it formed a soft texture
- Add the cashews and the flour in few steps. This will make the mixing easier. Use the spatula for mixing purpose, when the dough has become difficult to mix with spatula, use your hand to continue mixing
- Keep the dough in refrigerator for about 1 minute to give a firmer texture
- Form the dough to small crescent or any form which you like
- Bake in the oven for about 30 minutes with temperature 160 C
- When the cookies are cooled down, spread the sugar icing or sugar powder.
