There are a lot of way of making stuffed capsicum. From the Spanish style, European style, American style and to the Asian style. Whether you love using the red bell pepper or green pepper, there is no denying the wonderful smell when this dish goes in the cooking. The spicy smell of the pepper or the capsicum filling the whole kitchen and sometimes the whole house, really increase your appetite. Beside, who doesn’t like spicy food? Well…. honestly, I don’t like too much spice, but I would love to have a dash of spiciness in my food. Being born and grew up in South East Asian country, we are used to have the non-spicy food, but we do have additional to it, we always have the sambal or the chili sauce to accompany our dishes.

And the pepper/capsicum is just about right, it’s not spicy but it is enough to give you a little kick which you are looking for.

I have made my own version of Stuffed Capsicum. I know there are a lot of Indian style of stuffed capsicum dish in the internet, but I love simple food. I just feel that sometimes you have to leave the original taste of an ingredient. We don’t want to overpower a beautiful flavor of an ingredient with so much of spice and curry.

How to Cook:

Ingredients:

  • ¬†2 pcs green/red capsicums – cut the top as shown in the picture above, remove the seeds. Wash the capsicums after removing the seed, to reduce the spice.
  • 1 pc big onion – chopped
  • 1 pc big tomato – chopped
  • 1 pc carrot – chopped
  • 4 pcs french beans – chopped
  • 50 grms paneer or cottage cheese
  • Salt – to taste, in this recipe I use half tsp salt
  • A sprinkle of chili powder
  • 2 tbp oil

How to make:

  • ¬†Heat the oil
  • Add the onion, saute until it is soft
  • Add the carrot, beans – cook until it is almost done
  • Add the tomato, salt and chili powder – cook until it is done
  • Use your hand to smash the paneer until it is a bit crumble, add it in the dishes
  • Stir it all together and taste it. Add more salt if you feel like. Now the filling is ready
  • Divide the filling into 2 parts and fill each of the capsicum with the filling
  • Heat the oven upto 200 degree
  • Brush a little oil on the capsicum and bake until the capsicums are softer.
  • It is ready to be served.
