Sweet and Sour Vegetable

 

This recipe was created as the vegetarian version of fish sweet and sour. Instead of putting the deep fried fish as the main ingredients, I have replaced it with the vegetables.

Optionally, you can add pieces of tofu which is already dipped in flour and deep fried.

How to make:

Ingredients:

  • 1 pcs carrot – thin slice diagonally – or according to your taste
  • 5 pcs baby corns – thin slice lengthwise
  • 5 pcs french beans – thin slice diagonally
  • 1 pcs big cucumber – cut lengthwise into 4, remove the seeds and cut thin diagonally
  • 3 pcs onion leaves – cut about 3-4 cms length
  • 2 cloves of garlic (big size) – crushed and chopped
  • 1 pcs big tomato – cut lengthwise into 8 pcs
  • 2 table spoons tomato sauce
  • 1 table spoon vinegar
  • Salt and pepper
  • 1 table spoons oil

How to make:

  • Heat the oil in a pan
  • Add the carrot, baby corns and french beans. Cook until soft
  • Add the cucumber, tomato and cook for about 3-4 minutes
  • Add the onion leaves, tomato sauce and vinegar. Stir.
  • Add the salt and pepper as per taste

Ready to be served with warm steamed rice :)
